Mushrooms contain glutamate and guanylate, which provide the umami taste and aroma, respectively. They can be used as natural seasoning for dishes, boiled in broth or powdered. Umami and chewy like meat, but with much lower caloric and fat content, good for diners watching their calories!

Fermentation takes place in clay pots (3 years for soy sauce and soybean paste and 1 year for pepper paste) for a proper traditional fermented taste.
